Teriyaki Beef & Rice

I wasn’t expecting to share this recipe on here, let alone as the very first post, but after posting this on my Instagram and getting a positive response, I thought I’d share this simple teriyaki beef and rice recipe. This is a quick and easy recipe that we make with a handful of things we already have in the cupboard or the freezer. This means no making of sauces, no cooking for more than ten minutes – this is a meal you make in a pinch.

I would usually use a recipe maker plugin to layout this recipe in the perfect way but you only need a handful of ingredients and a handful of instructions for this – plus I only have the one photo of the finished dish – so I thought I’d bypass using it this one time. This isn’t a dish that you take your time to make, this is a dish you make when you want something quick and flavourful on the table within a short amount of time.

For the dish, you will need:

  • Frylight or oil
  • 500g of diced beef
  • 2 fresh peppers (colours of your choice), diced – or a handful of fresh peppers
  • 1 pouch of boil in the bag rice or microwave rice
  • Ready made teriyaki sauce or your very own teriyaki sauce you’ve made (find a great recipe here)

To make it, you need to:

  1. Spray your frying pan with Frylight or add a dash of oil.
  2. Add the beef, frying until cooked at a medium heat, turning often to ensure all sides are cooked. Add the peppers and continue frying until cooked.
  3. Liberally pour your teriyaki sauce over your beef and peppers, stirring to make sure everything is covered.
  4. Whilst doing this, boil a bag of rice in a saucepan or pop a microwaveable rice from your pantry into the microwave.
  5. Split the rice into bowls before adding the teriyaki beef and pepper mix on top.
  6. Enjoy.

Hopefully my future recipes will have more photos of the ingredients and method and won’t be as quick and easy and rely on quite so many ready made or pantry ingredients!
